This is a wonderful spot! The ambiance is casual, bright and colorful. The service was good. We ordered the shrimp encocado which was creamy and savory. We also ordered the chicken Lomo saltado which was a great combo of veggies, meat and sauce with a hint of spice. Overall the food was tasty! They offer date night specials on Wednesday's which comes with a bottle of wine and 2 entrees (options vary weekly) for $55.

As always, another amazing meal! I tried the lamb (Chuletas De Cordero) and it was delicious! Can't wait to come back again!

This is my husband's favorite restaurant of all time. This authentic Ecuadorian cuisine started out small and since they started and have expanded their space in Northeast and added a St. Paul location. They also have food trucks during the warmer weather. Our favorites are the saltado and many of their breakfast/brunch options. We brought our Ecuadorian friend there and she said it really tasted like back home for her. We are biased because it is walking distance from our house and we do go there a lot. They have great service, cute outdoor patio and their food won't disappoint!!

Circa 2015 - but just went there in 2024, still the same as I remember it! Now, I'm not an ecuadorian myself, so the authenticity of this place relied on the waitress explaining that their staff and regular customers are ecuadorian and love this place. That said, I am known to be a very picky eater. My favorite food is Italian, and I can hardly stand Mexican food (unless it's Chipotle). Driving up to the restaurant, we had one member of our party begin to wonder if we were the bridal party about to get food sickness in Bridesmaids. However, walking into this restaurant opened my eyes to what I should've expected. It was amazing smells the minute you walk in. The staff was friendly and amazing, our waitress took care of us very, very well. I had the Guava Mimosa and Churrasco with steak and I loved it. I devoured it! We also had dessert, tres leches, and it was just as good. TL;DR, don't judge a book by its cover, this place is a hidden gem.

Great space, plenty of residential parking, and fantastic staff. My friends and I got there 5 minutes before the breakfast menu closed and the server was so wonderful and took our orders really quick. I got there llapingachos breakfast and it was DELICIOUS! The potato pancakes were so soft and so flavorful; all the spices combined together so well! And of course the pulled pork was super juicy and yummy. My partner got the Chimborazo breakfast hash with the ribs and it was equally delicious. The has had a good amount of veggies that was super juicy and the rest in the ribs melted off the bones. The pancake, all delicious. Overall, I would definitely comeback!

First time guest for lunch. Very welcoming staff. Our server was quick to point out favorite things on the menu. My friend and host is from Ecuador so she helped with some input as well. The Yucca fries were great as were the fried plantains with Chimichurri. Both entrees were flavorful and came with the similar sides of steamed white rice, glazed sweet plantains, Chimichurri and a tomato red onion salad. All very fresh tasting ingredients. The Churrascco steak was fairly well done and a bit tough but had good flavor. Very comfortable setting, clean and well staffed.

Chimborazo is an amazing place you must stop in and try! Have been here multiple times because the food keeps driving me back!! Every time I have come, I walk in and there's always been a table available without waiting. The hostess and waiters are amazing at their jobs -- fast, friendly, knowledgeable about the menu and recommendations. The outdoor seating is fun to people watch and enjoy the greenery around the edges of the space. Love everything I've eaten here, and at top of my list I would highly recommend the empanadas, seco de carne (beef stew), and saltado. The patacones are impeccable and addicting! There's also a Date Night special that is hard to beat -- 2 entrees and a bottle of wine! Menu items also offer vegetarian options which is a great option to accommodate differing preferences. Love this place and look forward to coming again soon!!

I have no idea why I was so hesitant to check this place out. While the outside looks tiny, there's plenty of space inside! Parking is mostly street unless you're lucky and grab a spot in the small lot. We stopped in on a Saturday right before brunch ended. Our party of three waited about 7 minutes before we were seated. Honestly the clock was ticking away before brunch officially turned into lunch. I went with a pulled pork meal that came with scrambled eggs, fruit, and pancakes. The pulled pork was good enough to come back for. Everything else was great- it's amazing how something so simple could be so flavorful. My sister got basically a shrimp curry with rice, it's her go to dish every time she comes here. I would love to make this one of our regular places. The server was friendly and helpful when we had questions and the vibes make you feel like you're at small spot where everyone knows you. If you're like me and you've been putting this place off stop! Go check it out and definitely try the pulled pork!

My friend got the Lomo saltado and it was overwhelmingly sour. The waiter was understanding and accommodating though. The outdoor seating is also nice. I got the chorasco with flank steak and I thoroughly enjoyed it. 8/10

If you ask a bunch of Yelp Elites their favorite restaurant in NE, chances are they'll say Chimborazo! I can see why this place comes highly recommended. I haven't been exposed to South American food nearly as much as I would have liked, but that made the mix of flavors in these dishes stand out even more. The llapingachos (cheese-filled potato pancakes. Served with egg, curtido, and peanut sauce) were soft and cheesy and so good The curtido helped brighten it up nicely! The saltado (marinated chicken stir fried with peppers, onions, tomato, and potatoes. Served with rice and avocado) was the star of the show though! Super flavorful, a little bit tangy, and oily in the best way (weird to say, ik). This was a heartier meal and one of their most popular dishes. The rice was cooked to perfection! When I go back, soup + their sandwiches are on my hit list
